Easy Chocolate Cupcakes

Serves: 12

  • 1 cup Our Family® All-Purpose Flour
  • ¼ cup Our Family® Unsweetened Baking Cocoa
  • ½ tsp. Our Family® Baking Soda
  • 4 oz. Our Family® Semi-Sweet Chocolate Baking Squares, broken apart
  • 6 tbsp. Our Family® Unsalted Butter, cut into pieces
  • ¾ cup Our Family® Granulated Sugar
  • 1 tsp. Our Family® Pure Vanilla Extract
  • 2 Our Family® Large Eggs
  • ¾ cup water
  • Our Family® Creamy Milk Chocolate Frosting
  • Our Family® Semi-Sweet Chocolate Mini Morsels
  1. Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners and set aside.
  2. Whisk together flour, baking cocoa and baking soda; set aside.
  3. In a large microwavable bowl, heat baking squares and butter 3 – 4 minutes at 50% power, stirring every 60 seconds, until completely melted. Stir in the sugar and vanilla. Add eggs, one at a time, beating with an electric mixer on low speed until well blended.
  4. Add one-third of the flour mixture to the chocolate mixture and beat on low speed until just combined. Add half of the water to the chocolate mixture and beat on low speed until just combined. Repeat, ending with the last third of the flour mixture. Do not overmix.
  5. Divide batter evenly into prepared muffin cups. Bake 19 – 21 minutes or until a toothpick inserted in the cupcake centers comes out clean. Allow cupcakes to cool in the pan for 5 minutes, then remove to wire racks and cool completely. Top cooled cupcakes with frosting and mini morsels.
