Our Family Enchiladas

Ingredients

  • 2 Tbsp Our Family® Extra Virgin Olive Oil, divided
  • 3 cups shredded rotisserie chicken
  • 1 whole yellow onion, diced and divided
  • 1 package Our Family® Taco Seasoning
  • 2 tsp Our Family® Garlic Powder
  • 2 10 oz. cans Our Family® Red Enchilada Sauce, divided
  • 8 Our Family® Flour Tortillas
  • 2 ½ cups Our Family® Finely Cut Mexican Cheese
  • 1 box Our Family® Spanish Rice Mix, cooked by package instructions
  • 1 14.5 oz. can Our Family® Chopped Tomatoes
  • 1 15 oz. can Our Family® Black Beans, drained and warmed
  • ½ tsp Our Family® Salt, divided

  • 1 tsp Our Family® Cumin
  • ¼ cup fresh cilantro leaves, chopped

  • 2 each roma tomatoes, chopped
  • 4 each green onions, trimmed, chopped and divided
  • 1 each lime, cut into wedges
  • Our Family® Sour Cream
  • Our Family® Restaurant Style Salsa

Directions

Enchiladas

  1. In a large skillet set over medium heat, add two tablespoons of the olive oil. When the oil is hot, add the 2/3’s of the onions and sauté until clear but not browned. Add cooked chicken, Our Family Taco Seasoning, cooked according to package directions, Our Family Garlic Powder, cook for three minutes on medium heat. Pour in ⅓ cup of Our Family Red Enchilada Sauce to the pan and stir to combine. Remove from heat and set aside.
  2. Pour the remaining Our Family Red Enchilada Sauce into a shallow dish or bowl. Lay Our Family Flour Tortillas out and with chicken and onion mixture evenly distributed over shells and a sprinkle of Our Family Finely Cut Mexican Cheese over chicken. Roll up each tortilla and place into the prepared baking dish.
  3. Pour remaining enchilada sauce over enchiladas, and cover with remaining cheese.
  4. Cover enchiladas with aluminum foil and bake for 20 minutes, then remove foil and continue baking for an additional 10 minutes.
  5. Remove from the oven and let rest for 10 minutes before serving.

 

Restaurant Style Black Beans

  1. Sauté remaining onions in remaining oil until browned. Add remaining Our Family Salt, Our Family Ground Cumin and add Our Family Black Beans and cook over medium heat for five minutes.
  2. Prepare Our Family Mexican Style Rice according to box directions, using Our Family Chopped Tomatoes.
  3. Plate the enchiladas with beans and rice and serve with remaining green onions, chopped tomato, Our Family Sour Cream, Our Family Restaurant Style Salsa, Our Family Finely Cut Mexican Cheese, fresh cilantro and lime wedges.
